I like the way Notion implements markdown shortcuts: https://www.notion.com/help/writing-and-editing-basics#markdown-and-shortcuts

I also suggest you follow the Google Docs keyboard shortcuts for formatting also. E.g.,

⌘⌥ + 1-5 will format the current line as an H1 through H5
